Happy Fourth
Hope everyone got the day off. Saw a flier yesterday, apparently someone's opening a "North Carolina Country Store" here in Brooklyn -- I think to sell sausage, mainly. Any guesses what "souse meat" is (besides maybe a typo)?
Barry, Don't listen to Christie! Souse is pig snouts, ears and skin cooked together and refrigerated & formed in a loaf, then you slice a thin slice, pour vinegar over it and enjoy! Kinda the taste of pig's feet!(Not that I would know, but Ricky knows) A Dandoodle is made from the large intestine. Is this more that you wanted to know?
Uhhhh... yum? Don't know why they'd need to import that though, I'm sure you could find pig snouts and stuff in Chinatown -- probably not labeled as such, though...
